- 4 pieces sliced white bread crusts removed
- 20g 1 tablespoon butter melted
- 2 garlic cloves crushed
- salt ground black pepper
- 3 bacon rashers rind removed chopped
- 1 tablespoon olive oil
- 1 ripe avocado halved peeled stone removed cut into chunks
- 150g semi dried tomatoes cut into long strips
- 2 tablespoons chopped fresh chives
- 2 tablespoons extra virgin olive oil
- 1 hard boiled egg peeled quartered

- preheat oven to 200u00b0c use a rolling pin to flatten the bread slices until 1mm thick trim the edges to make neat squares
- place four 250ml 1 cup ovenproof teacups upside down on a baking tray combine butter and 1 garlic clove and brush over both sides of bread press a slice of bread over each teacup and sprinkle with pepper cut four sheets of foil large enough to cover the bread and press firmly over each
- bake the bread in preheated oven for 10 minutes then remove foil and bake for a further 15 minutes gently remove bread from cups and place open side up on baking tray bake for a further 5 10 minutes or until crisp and golden remove from oven and set aside to cool
- heat a medium non stick frying pan over medium high heat add the remaining garlic bacon and olive oil and cook stirring often for 3 minutes or until crisp transfer to a medium bowl and add the avocado tomatoes chives extra virgin olive oil salt and pepper mix gently to combine
- spoon filling into bread baskets top with egg and serve immediately
